Khichari - Ayurvedic Recipe

The Khichari is an idian meal based on lentil and rice salad. A healthy, nourishing and savourous plate with many spices !

 

Ingredients for 2 people : 

1 cup of yellow nor green lentil
1 cup of basmati rice (white nor brown as you please)
6 cherry tomato (sliced in 4 pieces)
2 carrots (sliced into rings)
1 piece of ginger (chopped)
1 teaspoon of cumin
1/2 teaspoon of asafoetida nor hing
1/2 teaspoon of turmeric powder
1/2 cinnamon stick
8 peppercorn
5 curry leaves
2 tablespoon of ghee butter
6 tablespoon of hot water
8 fresh coriander leaves
2 tablespoon of peas (washed with hot water if previously frozen)
Himalaya salt (as much as you please)

 

 

Recipe :

Wash and drain the lentils, then let them soak in 3 cup of hot water for 1 hour. Wahs and dry the rice and let it soak for 15 minutes if white rice nor 30 minutes if it's brown rice. Heat the ghee butter in a big pan unitl it's really hot. Add some cumin and let it crackle. Then add the asafoetida. After 1 minutes, add the ginger, the cinnamon, the pepper and the turmeric powder. Turn the sotve temprature on a lower heat. While mixing it, add the tomatoes, the peas and the curry leaves. Afterthat, add the lentils, the rice and the salt. Pour the water and let it cook for 5 mintues on a middle heat. Cover it and let it stew for 20 minutes on a low heat. Spread the coriander on the top. Turn off the stove and let it be for 5 more minutes before serving.

 

NB : If you still have some Khirachi, you can keep in 2-3 days in the fridge and warm it up with some ghee butter.

 

This meal is made to share with your loved once. Convenient for all doshas types, you won't have to worry about who can eat it or not. Enjoy your meal !
